Quick Coconut Curry Soup with Noodles - Gluten Free

This easy coconut curry soup is fast, flexible, and full of flavour. You can grab the ingredients from a quick dash to a convenience store or mini supermarket. Fry yellow curry paste with peppers and onions, stir in shredded chicken, water, coconut milk, and rice noodles, plus any quick-cook veg like baby corn or spinach.
